

It is when fasts come or when I am really in a mood to have instant dosa but a filling one, I make this.It is very easy and requires no standing time.You can make the batter start making it and eat ,that’s it.Wheat dosa is also a good option to diabetic patients and they can easily eat this to heart’s content.I prepared this dosa for my MIL for dinner sometime last week.Some make this plain wheat dosa but i have added a quater cup of rice flour for extra crispiness.I remember grandma preparing these and in those days people were more so she used to make dosas with two dosa tawas simultaneosly, since this dosa tastes best when had hot.So here goes the wheat dosa recipe…

Ingredients
- 1 cup Wheat Flour
- 1/4 cup rice flour
- 1/4 tsp Jeera / Cumin
- 1/4 tsp mustard
- 1 Chilly Green
- to taste salt
- 1/4 tsp asafoetida
- ginger chopped a bit
- a few coriander leaves
- 1 sprig curry leaves
- Oil (for tempering and roasing)

Instructions
- In a vessel add wheat flour,rice flour,chopped ginger,green chilly,curry leaves,coriander leaves,asafoetida,salt and cumin.Temper mustard and also add that to the said mixture.
- Make a thin batter without forming any lumps.
- Set aside for 15 minutes.
- Drizzle oil in the tawa and with the batter make dosas slowly.Make it thin.Add oil on the sides.
- Flip on the other side and roast.
- Serve hot with any chutney of your choice.I served with curry leaves thokku.

- You could add a quater cup of maida to the batter.
- Addition of buttermilk to the batter in place of water enhances the flavour.
- Always serve hot.
