Sabudana vada/Sago Vada or Javvarisi Vadai is one easy tea time snack.It is a Maharashtrian delicacy and I learnt it from a Marathi friend who also taught me to make Misal Pav.This one is a deep fried snack taken during vrat days or fasting days.You can add chopped onions too if you want to make for parties or get togethers.Tastes equally good.Delicious and addictive snack ,this also has boiled and mashed potatoes and served with green chutney.These are so filling that, so they are taken during fasting days.You can make the batter in advance and store in the fridge too and make use of it as and when needed.I made this for publication in Malligai Magal magazine this month under the heading 25 summer snacks.See recipe of the craving sabudana vada.

Ingredients
  • 1 cup Sabudana /Javvarisi
  • 1 potato Boiled
  • 1/4 cup Ground nut
  • 1/4 tsp Cumin / Jeera
  • 1/2 tsp red chilli powder
  • to taste salt
  • 1 pinch asafoetida
  • 2 Green Chillies
  • 1/2 lemon
  • a few coriander leaves
  • oil( for deep frying)

Ingredients
  • 1 cup Sabudana /Javvarisi
  • 1 potato Boiled
  • 1/4 cup Ground nut
  • 1/4 tsp Cumin / Jeera
  • 1/2 tsp red chilli powder
  • to taste salt
  • 1 pinch asafoetida
  • 2 Green Chillies
  • 1/2 lemon
  • a few coriander leaves

Instructions
  1. Soak sabudana in water for 2 hrs.
  2. Boil potatoes,peel them and mash.
  3. Dry roast groundnuts.
  4. Powder them coarsely.
  5. Squeeze water from sabudana and add it to a wide bowl.Add chopped green chillies,red chilli powder, powdered groundnuts,mashed potatoes,salt and asafoetida.Also add coriander leaves and lemon juice.
  6. Mix well.
  7. Flatten it with your hand.
  8. Drop in in a kadai of hot oil one by one all vadas.
  9. Fry till golden brown.
  10. Serve hot with green coriander chilly chutney.
Recipe Notes

Notes

  • If not fasting you may add chopped onions.
  • If you have roasted peanuts you may powder them and add or add as a whole.
  • Adding grated ginger also enhances the taste.
