

Lemon rice is a famous all time lunch box option.But in my house it is a no no from both hubby and daughter.But each day what shall I pack? I ponder always this and I sometimes it becomes difficult to decide.Lemon rice is a great travel food as well and we also prepare for Adi Perukku festival and offer to God.This becomes Neivedhyam to many festivals as well.While thinking of making a twist with the regular lemon rice I just added finely chopped capsicums while tempering.Normally only tempering is done and mixed with rice, but you can try this for a change. - 1 cup rice
- 1 tsp mustard
- 1 tsp urad dal
- 1 tsp Channa dal
- 1 Chilly Red
- 1 Chilly Green
- 1 pinch asafoetida
- to taste salt
- pinch turmeric powder a
- 2 = 3 tsp sesame oil
- 1 sprig curry leaves
- 1/2 lemon
- 1 no capsicum .
- 2 tsp Peanuts

- In a small pan add sesame oil and then add one by one mustard,urad and channa dal,asafoetida,peanuts,red and green chillies.
- Add turmeric powder and curry leaves.After they splutter add chopped capsicum pieces.
- Squeeze lemon add salt and keep aside.Cook rice as you normally would in the ratio of rice and water 2:1.Keep the rice grains seperate.Add the temperings.
- Mix well.
- Capsicum lemon rice is ready.We had it with potato fry.You can serve with vadams ans papad as well.
Notes
You can adjust the chilies as per your taste.
You can add finely chopped purple brinjals in place of capsicum.
Add cashews if you like.
