

This beetroot curry has been lying in my draft for quite a while now and thought of posting it only today.Beetroots as we all aware are kids favourite and also has numerous health benefits.It is known to control blood pressure and helps to fight heart diseases.Loaded with nutrients like pottasium,magnesium and iron this is really one wonder veggie.This recipe I made here is a simple dry curry or stir fry and can enjoyed with rice as as well as rotis too.So here goes the simple recipe of beetroot stir fry.

Ingredients
- 2 beetroot small
- 1 tsp red chilli powder
- 1/2 tsp turmeric powder
- 1 onion
- 1/2 tsp Mustard seeds
- 1/2 tsp urad dal
- to taste salt
- 2 tsp Oil
- 1 Sprig curry leaves

Instructions
- Peel the skin of beetroots and chop them.Finely chop onions too.Heat oil in a pan and add mustard seeds, urad dal and curry leaves.
- Once they crackle add chopped onions and fry till pink.
- Now add beetroot pieces.
- Add salt,red chilli powder and turmeric powder.
- Sprinkle some water to ease cooking.Delicious beetroot fry is ready to be served.
- Enjoy this curry with steaming rice and gravy.

Notes
You can add chopped carrots too along with beetroots.
Instead of red chilli powder you can add sambhar powder.
Also addition of grated coconut enhances the flavour.
