Pudina Rice I make whenever there is boredom to make anything which requires long preparations.This is a rice variety and a lunch box option too which is apt for the busy mornings.Normally rice is made daily at home with any gravy such as sambhar or rasam, but sometimes to break the boredom I make this. Pudina or mint is one flavourful leaf and enhances the taste of rice.As I was thinking what to make for lunch this suddenly cropped up mind and I thought since it is not in my blog, clicked the pictures as well. Ingredients
  • 1 cup rice (cooked)
  • fistful Pudina a
  • 1/2 tsp mustard
  • 1/2 tsp urad dal
  • 1/2 tsp Channa dal
  • 2 Chillies Red
  • 1 tsp Coriander Seeds
  • to taste salt
  • sprig curry leaves a
  • a few Cashewnuts
  • a few Peanuts
  • 2 tsp Oil

  • 1 cup rice (cooked)

Instructions
  1. In a pan add oil and add mustard,urad dal,channa dal curry leaves,cashewnuts and peanuts one by one.
  2. Once they crackle and dals turn brown take them out and keep aside.In the same pan add some oil and add some urad dal and fry. Add now coriander leaves,curry leaves,red chillies and pudina and fry a little.
  3. Place them in the blender.
  4. Grind nicely.
  5. Cook and cool rice and seperate the grains.
  6. Put the ground mixture and temperings on the rice.
  7. MIx well.
  8. Enjoy pudina rice with vadams,papads or raita.

Notes

You can add green chillies in place of red ones.

Adding pepper jeera powder is another option.
