

It was for a long time I wanted to post this versatile thokku. I call it It versatile because you can have this with almost anything.I have added chilli more than usual this time to look like the Adyar Grand Sweets tomato pickle.It can be stored for many days so have added oil and chilies more.It is very easy to make and is one of the pickles which beginners can try out easily with confidence.Do try this pickle when you have tomatoes in bulk.See here the simple recipe..

Ingredients
- 4 Tomatoes Red big
- 3 - 4 tsp red chilli powder
- 2 tsp mustard
- 1/2 tsp fenugreek powder(roasted and grounded)
- 1/2 tsp turmeric powder
- 1/2 tsp asafoetida
- to taste salt
- 1 1/2 - 2 tbsp sesame oil
- 1 tsp jaggery -

Instructions
- Wash and pat dry dry tomatoes.Chop them finely.
- Dry roast fenugreek in a pan.
- Once cooled powder it finely with turmeric powder.
- The powder should be fine.
- Take a pan add sesame oil to it.Add mustard seeds and when they crackle add asafoetida.
- Add chopped tomatoes.
- Add red chilly powder and fenugreek, turmeric powder and salt.
- Mix well.
- Lastly add powdered jaggery and mix well
- Serve with rice,chapatti or any item.

Notes
- Always use clean and dry spoon while taking pickle out.
- Use sesame oil only.
- Using fenugreek powder adds a peculiar aroma to the pickle.
