

Rice is always a favourite at home and besides making accompaniments such as Sambhar ,Rasam or any other gravy at home,for lunch packing I often wonder what could i possibly pack today each day with rice.I was searching for one such rice based recipe,that I stumbled upon peanut rice.I have peanuts well stocked at home for making snacks or simply roasting and adding salt and chilli powder to it etc.or for simply adding them to other rice items for a garnish but never heard of making rice with itself.Peanuts are a good source of nutrients,minerals and amino acids. They also have a good share of vitaminE and also found to lower the LDL or bad cholesterol and increases HDL or good cholesterol.Whatever it is it is liked by all is it not?Now I made this last week for lunch and packed it for hubby and my daughter.Was kind of skeptical as how would they like it and was happy to know I fared well.Now this needs very little preparation and here is the recipe…

- 1 cup rice -
- 1/2 cup Peanuts -
- 1/2 tsp Sesame Seeds -
- 1 tsp ghee -
- to taste salt -
- 1 tsp mustard -
- 1 tsp urad dal -
- 1 tsp Channa dal -
- 1 pinch asafoetida
- 1 tsp Oil -
- 1 Sprig curry leaves

- Pressure cook rice and cool completely.Add oil and ghee to keep the cooked rice.Take peanuts and roast them.Then rub them and phew them to take the skin off.If using roasted peanuts you can use them directly.
- Dry roast kopra cut pieces,sesame seeds and red chilli till golden brown.
- Put them in a blender.
- Grind coarsely.
- Take a small pan add oil and when it gets heated add all the tempering items and turmeric powder and switch off the stove.
- Add the coarsely ground powder and salt to the cooked rice grains.
- Serve with papad/chips or any dry curry.
Notes
For seasoning you can add a few roasted cashew nuts.
Though i have used kopra you can use coconut gratings as well.
After mixing well add 1/2 ghee for extra taste and to prevent the rice from getting dry, if packing for lunch box.
