

This is a simple dry curry normally prepared in all house holds as an accompaniment to Rice and Sambhar and Rasam.Some dry curries taste best with tamarind based gravies some with curd based gravies.I will soon post a seperate list of which tastes best with which.Unlike other recipes with Ash Gourd this one does not need curd. Seeing the health benefits of ash gourd I make any one variety of any ash gourd dish at least once a week.It has carbohydrate, protein and fibre and is very moist i.e.it has high water content.Due to it’s diuretic properties patients have said to have increase output of urine.You can cook it in no time and it’s easy to make as well.Besides making Sambhar,Rasavangi or Moor Kootu try this simple yet tasty curry for a change and enjoy the benefits of ash gourd in your meal.I made this yesterday and served with a simple sambhar.This is how it is made..

- 200 gms ash gourd -
- 1 tsp Mustard seeds -
- 1 tsp urad dal -
- 1 tsp Channa dal -
- 1 red chilli -
- pinch turmeric powder-a
- 3 tsp coconut grated-
- 1 sprig curry leaves -
- to taste salt -to

- Cut ash gourd into small cubes.
- In a small pan add a little oil and add mustard seeds, urad dal, channa dal and red chilly.
- Now add cut ash gourd pieces,salt and turmeric powder and add a little water just enough for the vegetable to get cooked.
- Once it is cooked add coconut gratings and curry leaves.
- Serve with any tamarind based gravy or rasam.
Notes
You could add 1/4 cup of soaked moong dal along with ash gourd to make it even tastier.
Instead of red chilly you can add green ones.
If you want it spicy add 1tsp of sambhar powder to the ash gourd.
