

It was one lazy saturday afternoon that a sudden idea struck me.It ia always like this.Ideas splurge in suddenly for me and when I think hard sometimes I am totally blank. I am sure all of us experience this sometimes.It was heavily raining and I was left with only potatoes in my pantry. I was pretty sure with no onion in hand, my family would fuss eating the potato.Searching for a no onion alu recipe this Ajwaini Alu recipe came as a blessing. Ajwain is caraway seeds in hindi and omam in tamil It is one seed which has innumerabe health benefits.It helps in digestion, good anti acidic agent and also helpful in cough and cold.It is an effective remedy in fighting with abdominal pains as well.I always have a good stock of ajwain in my kitchen. Now let us see how Ajwaini Alu is made.

- 1/4 kg Baby Potatoes
- 1 tsp Ajwain / Caraway seeds
- 1/2 tsp jeera
- 1/2 tsp turmeric powder
- 1/2 tsp Chilly Red Powder
- 2 tsp Oil
- To Taste salt
- A Few coriander leaves

- Boil baby potatoes in a pressure cooker and once cooled peel them.You can prick the potatoes with a fork so the masalas are infused into the potatoes.
- In a pan add oil, jeera and ajwain.
- Add baby potatoes now followed by turmeric powder and red chilly powder.
- When it is getting roasted add salt and mix well and garnish with coriander leaves.
- Serve hot with jeera rice/pulao or rotis.
Notes
Though I have added whole ajwain, you can crush it and add too.
You can use big potatoes and cut them in to pieces.
You can sprinkle a little rice flour while the potatoes are roasted, it will give a nice crunch.
