VENDAKKAI CURRY

 

Who doesn’t like lady’s finger?I am afraid there are a lot in the crowd who will agree with me.It is one of those veggies that goes with north and South Indian cuisine.I have already one North Indian curry with this awesome veggie, so I thought of posting a simple yet delicious and crunchy curry.This one needs no preparation and so can be made in a very short time.Lady’s finger has many health benefits, besides being a good for diabetic patients.To name a few they are proven to increase memory, boost immunity and is an excellent laxative.I make this often at home and tastes great with sambhar rice and rotis as well.

The tasty lady’s finger has one disadvantage. But that can be easily averted. Yes. It could turn slimy and you can avoid it by wiping it with clean cloth after washing. This prevents from sticking to one another. You can also add a teaspoon of gram flour.This way it stays crispy.

  1. Wash and pat dry the ladyu2019s fingers.Cut them and keep ready.
  2. In a kadai add oil and allow mustard seeds to splutter and urad dal golden brown.
  3. Add cut lady's finger.Now add sambhar powder and salt.
  4. Fry till they are cooked and slightly roasted on the edges,but be sure not to turn them black as they would taste bitter.
  5. Wait till they turn brown.
  6. Vendakkai curry is done.Serve piping hot with rotis or rice.

Notes

While frying adding a teaspoon of curd for extra taste.

Make sure no water is there before cutting as that would result in sticking of lady's fingers.

You can garnish with grated coconut.
