PAAL POLI

Paal Poli is a traditional sweet made during poojas and festivals like Tamil New Year, Boghi and Avani Avittam. These little delights are nothing but maida pooris which are folded and fried and later soaked sweetened milk with dry fruits. They stay good for 4-5 days, if stored in fridge. Usual method of making these pooris are with maida, but you can make them with rava or a combination of rava and maida in equal propotions. People add cardamom powder or edible camphor for aroma to the milk which enhances the flavour immensely. The practice of making these polis are followed in weddings during the previous day of marriage. It is mandatory to have polis during Mappilai Azhaippu i.e. Nichayadhartam which takes place the day before the wedding in Tambrahm marraiges.

Coming to the recipe, you can use condensed milk to add more thickness and richness to the sweet. I have in my blog other varieties of poli such as Paruppu Poli and Coconut Poli which are also quite delicious and yummy. This sensational dish can be made in a few minutes and the preparation time is also very less. You can also flavour it with almond powder and saffron to give a twist to the original recipe. This soft polis just melt in the mouth and you can swallow it with the milk in which it is soaked. In many cases it is offered to God as Naivedhyam before it is partaken. Also I have heard of one variation in which khoya or powdered dry nuts and fruits are stuffed into the puris and deep fried and then soaked in flavoured milk. You can try out that version as well, but I stuck to the authentic and simple method. Try out this sweet delicacy and let me know how it turned out.

  1. In a bowl add maida.
  2. Adding oil and water mix well.
  3. Knead to a soft dough.
  4. Make small puris with the help of rolling pin.
  5. Heat oil and deep fry the puris one by one.
  6. Once golden brown take it out and fold it while still hot.
  7. Similarly make rest of the puris and set them aside.
  8. In a vessel boil milk with sugar and cardamom powder.
  9. Transfer the milk to another vessel.
  10. Add chopped almonds to the milk mixture.
  11. Add the fried puris to the milk mixture.
  12. Soak until it becomes soft.
  13. Serve and enjoy.
Recipe Notes

You can use full cream milk for best results.

You can use any dry fruits for garnishing.

Adding saffron adds colour and flavour.
