KUTHRAVALI UPMA/BARNYARD MILLET UPMA

Upma is a tasty breakfast recipe made in all South Indian households with rava , rice and wheat rava also. This millet upma was a recipe, long pending in my list and I tried this with Barnyard millet.  Kuthravali is Jhangora in Hindi ,Odalu in Telugu ,Kavadapullu in Malayalam and Oodalu in Kannada. As we all know millets are good substitutes to rice and have a few millet recipes in my blog. I have included vegetables to make it richer, but you can try plain upma as well. This is good for heath and has low glycemic index. It improves metabolism and helps in maintaining body temperature.  lso this millet variety has lesser carbohydrate content and has lots of fibre. Easily digestable recipe this can be made in a matter of minutes.

The taste of this upma is close to Arisi Upma if you do not add the veggies. This can be well  prepared and relished in the vrat or fasting days and you can avoid the use of onions, then. The quantity of water used in this millet upma is more than that of regular upma to give a soft and fluffy texture to the recipe. This is a nice lunch box option as well , but you can have it for dinner, breakfast or even evening snack. I have made coconut chutney as a side dish, but you can make tiffin sambhar or tomato chutney as well. Millets can be easily replaced for rice and can be substituted for good. Many recipes taste good and I have tried them in my blog. I have Foxtail Millet Pongal, Samai Payasam, Samai Vella Puttu, Thinai Adai and Varagu Dosa. Instructions
  1. In a cooker or pan(I used cooker), add ingredients given in the to temper table.
  2. Add vegetables.
  3. Meanwhile wash and soak millet in water.
  4. Add the millet after draining water.
  5. Mix well.
  6. Add water and salt.
  7. Pressure cook for 3 whistles.
  8. Barnyard Millet Upma or Kuthravali Upma is ready.
Recipe Notes

You can avoid onions if you don't want to.

Add grated coconut as a garnish for that extra taste.

Using coconut oil also enhances the taste.
