ALU BHINDI FRY

When it is monday,as they say i too experience MONDAY BLUES.Ofcourse on all days i do cook but on weekends it’s different.I can do everything slowly and cook a nice brunch at home.Last sunday i chanced to go to a nearby restaurant for dinner and i ordered this Alu Bhindi Fry.It was yum with limited spices and we had with hot phulkas.Not neccesary though,it would taste great with any other indian bread.So next morning when i had this monday blue thing again i thought,why not try alu bhindi homestyle?Ialso made pulao to go alongwith it.You can pair it with a simple raita or a dal tadkha.So when next time you are in a dillema as to what to pack for hubby’s or kids lunch box,give this recipe a try.With simple ingredients you can make them fingers licking.Alu and Bhindi are sure a great combo.Do try and let me know.

  1. Peel the potatoes with the help of peeler and cube them to medium sized pieces.Cut the bhindis to 1inch size.Likewise chop finely tomato and onion.
  2. Heat oil in a kadai and add jeera.Then add onions and fry till translucent.
  3. Now add the chopped tomato and all the dry masalas and fry.
  4. Add the potatoes now and add 1/2 cup of water.
  5. When the water is absorbed then add the lady's finger and toss well.Don't worry there will be no water so the bhindis will not be sticky.If you find it that way add itsp of oil and mix well.
  6. Alu Bhindi fry is ready to be enjoyed.
  7. Serve with any indian beard of your choice or pulao.

Notes

I have used kitchen king masala.You can use garam masala.

You could add crushed garlic pod while frying the onions.

I have used more lady's finger than potatoes, you can add them equally too, say another potato would suffice.
