CAULIFLOWER SOUP

It is very comforting to have any kind of soup at any time of the day. When you are hungry a good soup can be very filling. Loaded with vegetables it can be had by people of all ages. I normally make it on weekends so that all of us can have it leisurely. The sound of slurping the soup itself is very pleasing. Besides the regular soups like Tomato Soup, Lemon Coriander Soup and Carrot Ginger Soup, I wanted to try this Cauliflower Soup for a long time. I made this soup last week and it was a quick fix recipe as well. This kind of soup can be made with some variations. I recall a recipe once I had some years back, which had cauliflower florets with just salt and pepper powders along with crushed garlic pieces. They said it is called Chettinad Cauliflower Soup.

Besides adding cauliflower I have added carrot to it, which not only gave flavour but a mild sweetness to the soup. Addition of pepper gives heat and it works wonders specially in winter months. You can try peas, radish or small piece of potato as well in place of carrot. Also if you want to make this on fasting days, simply omit onion and garlic paste. If you are running out of time, you can boil the vegetables and keep it inside the fridge and use it as and when required. Also this soup can be kept in the freezer and the leftover can reheated when needed. If you like add any kind of cheese on top while serving which will give an awesome taste to the soup. Instructions
  1. Chop cauliflower florets and boil in water till soft.
  2. In a pan add butter add onion along with ginger-garlic paste.
  3. Add cooked cauliflower florets.
  4. Add chopped carrot and cook till it turns soft.
  5. Once cooled add it to a blender.
  6. Grind nicely .
  7. Transfer it to a pan and add water as per the consistency required.
  8. Add salt and black pepper powder.
  9. Add milk now.
  10. Boil for 5 more minutes.
  11. Serve Cauliflower Soup hot.
Recipe Notes

Add full cream in place of milk, if you want the soup even richer.
You can add red chilli flakes in place of black pepper powder.
