CARROT HALWA WITH KHOYA

Carrot Halwa is a delicious dessert that can be made in a matter of minutes. It is the most favourite recipe of my daughter who relishes each time I make it. It was last week I had got a big basket of fresh carrots which was brought by my mother from ooty estate through a friend. I instantly thought of making this as the carrots were juicy and red. It took very less time and the result was delicious and yummy. I added khoya also which added to the texture and the result was delicious. I have a carrot halwa recipe already in my blog, but wanted to try this with my new addition to the kitchen, my Nirlep Selec + Kadhai, which made the job easier in a few minutes. It was easy to mix and turn and due to even heat flow, it was made in a matter of minutes.


Carrot Halwa can be made more delicious by adding almonds, pistachios, cashew nuts and raisins. I have added cashew nuts and raisins and have cooked the whole carrots in milk. This will give a soft and creamy texture to the halwa . Even a person who is not an expert in making sweets can make this with ease and relish it. The melt in the mouth halwa is a treat to grace any occasion and I made this last week. You have to careful in mixing this as it tends to form lump. Fortunately the non stick coating of my kadhai helped me in the making of this halwa. In most weddings this is served with Vanilla Ice Cream and this a classic combination.   1. Grate carrots and keep them ready.
  2. • In a pan add a teaspoon of ghee and add grated carrots and mix well.
  3. • Add milk and cardamom powder and cook.
  4. Cook till it boils.
  5. Wait till the moisture is completely absorbed. Add ghee now.
  6. Add sugar .
  7. Mix well and cook till sugar melts.
  8. Add crumbled khoya.
  9. Mix well and add raisins and cashew nuts.
  10. Serve hot or cold with vanilla ice cream.
Recipe Notes

You can add any nuts of your choice.
You can use condensed milk in place of milk. In that case use less sugar.
Serve with Vanilla Ice Cream for more taste.
