AAMRAS

Aamras is a popular dessert in the states of Maharashtra and Gujarat. In the summers when mangoes are available in plenty, this recipe is enjoyed best in most households of the region. I have a Maharashtrian friend who gave this recipe to me. I had never tasted aamras and was wondering how to make it, when I suddenly remembered and asked her about this. much to my surprise, this involved only two steps and the dish was made. Usually it is served with hot pooris, but you can have it as a dessert as well. I served this with hot pooris and it was truly delicious. Some I put in the fridge and served as a dessert during dinner. Either way it was awesome. I also had his at a hotel in their Thali and it was flavoured with cardamom. The usual recipe says you can garnish with saffron strands or cardamom. But since I had cardamom in hand, I have used that in this recipe.

I have also come across people who like a thinner consistency of aamras and drink it as such. that way also this is delicious. After all , it is true that mango is the King of Fruits and it taste good in whichever way it is made and served. Some people like to add jaggery in place of sugar, which is another healthy option. To enhance the flavour of jaggery you can also add a pinch of ginger powder. The best past about this is you can store it in the fridge for a couple of days. Alphonso mangoes are considered to be the best for the recipe, but you can use any variety of mango that is available in your area. Instructions
  1. Remove the skin of the mango and cut in to cubes. Place it in the blender along with sugar and cardamom powder reserving some cardamom powder to garnish.
  2. Blend nicely.
  3. Serve with hot pooris or as such.
Recipe Notes

You can even use brown sugar as a healthy substitute to plain sugar.

You can add a teaspoon of milk to add to the flavour.

Use fresh mangoes for best results.
