Ingredients
  • 1cup Basmati RiceKohinoor Authentic
  • 1 Onion-piece
  • 2pods Garlic
  • 1/2– inch Ginger– bit
  • 1 Green Chilli
  • 1/4cup PineappleChunks
  • 6 Cashew nuts
  • 1tsp Schezwan Sauce
  • 1tsp Soya Sauce
  • 1 Carrot
  • 1/4cup bell pepperGreen, red and yellow (chopped)
  • to taste Salt
  • 1/2tsp PepperPowder
  • 2tsps Oil
  • a few Spring Onions(for garnishing)
Instructions
  1. Soak rice in water for half an hour.Cook well till the grains are seperate.Cool down completely.
  2. In a pan add oil,chopped ginger and garlic,green chilly and sliced onion.
  3. Once the onion turns pink,add broken cashew nuts.
  4. Add chopped carrot,red,yellow and green bell peppers.Fry them carefully, taking care not to burn them.
  5. Add soya sauce.
  6. Add black pepper powder and salt.
  7. Add pineapple pineapple pieces.
  8. Add cooked rice.
  9. Add schezwan sauce.
  10. Mix well.
  11. Garnish with freshly chopped spring onion greens.
  12. Pineapple Fried Rice is ready.

Notes

You can add peanuts along with cashew nuts.

You can also use sesame oil for thai flavour.

You can add a drop of vinegar to add to the taste.

Addition of dry fruits also makes it flavourful.
