Ingredients
Instructions
  1. Chop the veggies in small pieces.
  2. In a kadai temper oil and jeera.
  3. Add grated ginger and chopped onion.
  4. Once the onion has browned add turmeric powder,red chilly powder,coriander powder and eastern veg kadai masala powder.
  5. Add chopped tomato in a blender.
  6. And make a puree.
  7. Add this puree to the onion masala mixture.
  8. Wait till oil leaves the sides.
  9. Add rest of the vegetable now.
  10. Add water and allow it to cook.
  11. Add salt and crushed kasoori methi.
  12. Mix well.
  13. Garnish with coriander leaves.
  14. Serve hot with phulkas,rotis or rice.

Notes

  • If not using eastern veg kadai masala,then dry roast and prepare the masala given below.Rest follow the same proceedure.

For the masala

  • Coriander Seeds-1 tsp
  • Red Chilli-2
  • Cumin/Jeera-1/2 tsp
  • Garam masala-1/2 tsp
  • Fenugreek seeds/Methi-1/4 tsp
  • You can add capsicum of any colour of your choice.
  • If you want you can parboil the veggies and add to ensure fast cooking.
