Ingredients
  • 1cup Semolina / Sooji / Rava
  • 2 – 3tsp Maida
  • 1/4tsp Baking Soda
  • to taste Salt
  • Wateras needed
  • 1tsp Oil for kneading+to deep fry
Instructions
  1. In a wide bowl add sooji,salt,baking soda and oil.
  2. Mix well.Add now maida.
  3. Add 3 tsp of water again and mix till the mixture resembles bread crumbs.
  4. Add required water and knead well. Strech and knead again and again.
  5. Cover with a damp cloth for half an hour.
  6. After half an hour knead again.
  7. Roll it very thin with the help of a rolling pin.
  8. Cut into round shapes.
  9. Keep it ready.
  10. Heat oil and deep fry say 5-6 puris at a time.
  11. Fry till golden brown.
  12. Drain in a tissue.
  13. Crispy puris for chaats are ready.

Notes

Knead the dough well for 10 minutes to get crispy pooris.

Cover the dough with wet cloth and keep it covered for half an hour.

Roll the dough very thin to get puff pooris.

Adding baking soda ensures crispness.

Store in an air tight container.
