  1. In a pan add oil and add mustard,urad dal,channa dal curry leaves,cashewnuts and peanuts one by one.
  2. Once they crackle and dals turn brown take them out and keep aside.In the same pan add coriander leaves,curry leaves,red chillies and pudina.
  3. Place them in the blender.
  4. Grind nicely.
  5. Cook and cool rice and seperate the grains.
  6. Put the ground mixture and temperings on the rice.
  7. MIx well.
  8. Enjoy pudina rice with vadams,papads or raita.

Notes

You can add green chillies in place of red ones.

Adding pepper jeera powder is another option.
