In a heavy bottomed pan add ghee and add khoya.Mix well till it changes colour.
Now add sugar.
After 10 minutes of roasting,the sugar and khoya mixture would have amalgamated well and when the whole mass leaves the sides of the pan,switch off the flame.
Transfer it to a greased plate.
Add chopped pistachios on top and once cooled completely cut into squares.
The piece would be as shown.
Enjoy Khoya Burfi.You can store this in fridge for about 10 days.

Traditionally pista is added as a garnish.But you can add any nuts of your choice.
Even after switching off the flame,the sweet mixture will not be of totally solid mass.It will be goey and chewy after cutting into squares.
