Ingredients

urad dal

bunch
spinach
leaves

asafoetida

Instructions
Soak urad dal for an hour.
Drain and add green chillies,ginger,salt and asafoetida in a blender.
Grind in to a fine and smooth batter.This is the basic urad dal or methu vada batter.
Add curry leaves and mix.
Take vada batter and add chopped spinach leaves and onions .
With the help of a zip lock or any other cover make vadas.
Drop in slowly in a kadai.
Take out once crisp and brown.
Serve immediately with coconut chutney.Yummy.

Notes
You could add coriander leaves along with spinach leaves.
Keeping the batter in the fridge for an hour before frying will give a nice crunch.
Adding two twospoon of rice flour while grinding the batter will give a crunch to the vadas.
