Ingredients

carrot

onion

TO TEMPER

Instructions
Chop onion,tomato carrot,chayote,ginger finely.Add curry leaves and coriander leaves and keep them ready.
In a pan heat oil and add urad dal and red chilies.
Add veggies and ginger coriander and curry leaves.
Once sauteed and cooled place them in a blender with tamarind and salt.
Grind to a smooth consistency.Add water if needed.
Temper with mustard seeds,urad dal and asafoetida and serve with idlis,dosas or arisi upma.

Notes
You can even add snake gourd,bottle gourd,green peas brinjal etc.
Add more chillies if you want it spicier.
Adding green chilles also will enhance the taste.
