  1. Wash and pat dry green chillies after removing their stalks.In a pan adding a little oil fry them on a low flame.
  2. Slowly it will change colour. Do not blacken.
  3. Once cooled transfer it to a blender along with tamarind and salt.
  4. Grind nicely to a smooth paste.
  5. In the same pan add sesame oil and mustard to splutter. Also add asafoetida.
  6. Add the green chilli paste.
  7. Add turmeric powder and roast and ground fenugreek powder.
  8. Mix well and cook till oil leaves the sides of the pan.
  9. Add jaggery now.
  10. Wait for 3 minutes.till the jaggery mixes well with the green chilli mixture.
  11. Serve Green Chilli Thokku with curd rice or dosa.

Notes

You can temper urad dal along with mustard for that crunchiness.

Use only sesame oil.
