  1. Grate carrots finely.
  2. In a pan add a teaspoon of ghee and carrots.
  3. Let it cook for a while.
  4. Once the moisture is absorbed add full cream milk.
  5. Add sugar and mix well.
  6. Once the sugar amalgamates and completely absorbed with the carrots it means the carrots are cooked.After addition of sugar the mixture will turn watery,wait till it absorbed well.
  7. Add more ghee,cardamom powder and garnish with cashew nuts and pistachios.
  8. Carrot Halwa or Gajar Ka Halwa is ready for serving.

Notes

You can add khova or milkmaid in place of milk.

You can also add badam or any other dry fruit of your choice.

Addition saffron strands also enhances the flavour.

Use orange or red carrot whichever is available.
