  1. Take spinach leaves and wash them 2-3 times and put them in a vessel by adding a little oil alongwith green chillies and fry them a bit.Once cooled put them in a blender.
  2. Grind it to a puree.
  3. In the same pan add oil and saute onions till pink and translucent.Take them out.
  4. Add tomato and fry.
  5. In another pan add oil and add the items in the to temper table and add palak puree and onions and tomatoes.
  6. Add salt and sugar.
  7. Lastly add boiled and cubed potatoes.Also add milk/cream if adding.
  8. Enjoy this gravy with hot phulkas or rice.

Notes

You can boil/blanch palak in place of frying but i felt this is the quickest proceedure.

You can add coriander powder along with cumin powder.

Baby potatoes can be used in place of big ones.

Add cream/milk after switching off as that would avoid curdling.
