VADA PAV

 

 

Vada Pav is a street food which is deep fried potato patty with spices and chutneys and native to Mumbai.Though I have had this addictive snack many times,I am making it for the first time at home.This is a step wise process involving preparing chutneys,making potato patties and assembling them on the pav bun. Pav is a variant of Pao which means sweetened bread in Portugese. The Vada Pav is an innovative recipe made by a Marathi and the rest is history.Many restuarants sell these cute vada pavs and some have additional toppings as well.I am also fond of Pav Bhaji which I will be posting later.

Potatoes are boiled and mashed and spices are added.It is used as a filling for chickpea flour batter,which then is coated with the same and deep fried.The last step involves adding chutneys and assembling them on the pav. My daughter was too pleased to have this as an evening snack.Though you can have this anytime of the day,it tastes heaven with a cup of chai in the evenings.As you can see it is actually an indian version of a burger. The chutneys if more spicy adds to the taste.The toppings can be a bit creative like cheese vada pav, schezwan vada pav, corn vada pav etc.You can use any ingredients and mix it with potato filling and deep fry it.So don’t refrain yourself from making and trying these scrumptious vada pav and give it as a treat to your family and friends.

  1. Boil potatoes.
  2. Peel and mash them once cooled.
  3. In a pan add oil,mustard,asafoetida,crushed garlic and curry leaves.
  4. Add mashed potatoes,turmeric powder and salt.
  5. Mix well.Filling is ready.
  6. In a vessel add gram flour,rice flour,turmeric powder and salt.
  7. Add water and make a thick lump free batter.
  8. In another pan add oil and garlic cloves.
  9. Add grated coconut and red chilli powder.
  10. Transfer it to a blender.11.Grin
  11. Grind nicely.
  12. Make small balls out of the potato filling and dip in to the batter.
  13. In a pan of hot oil slowly drop in the balls.
  14. Take out once golden brown.
  15. Let them cool a bit.
  16. Fry one green chilli for keeping in the side.
  17. Slit the pav pan keeping one end still joint.Apply green chutney and sweet chutney on each bun.
  18. Now apply garlic chutney.
  19. Place the fried potato fritter on the centre.
  20. Vada Pav is ready to be served.Enjoy with a fried chilly for more taste with piping hot tea.

Notes

You can add corn cheese and panner with the filling.

You can more chilli powder,if you can take heat.
