UDIPI RASAM

 

 

Udipi is a small town in Karnataka,which has a unique and tasty cuisine famous all over the world.The people of the region use a saatvik way of preparing food and onions and garlic are devoid of usage.I tasted this rasam once in the Udipi Sri Krishna temple and was mesmerized by its awesome flavour.In Karnataka rasam is called saaru and is one of the important part of the menu.They make with freshly homemade pudi which is nothing but powder with which this rasam is made.Besides the various rasam varieties,I relish on this rasam very much.I am sure once you prepare this you will be tempted to make this often.

  1. Soak tamarind in water.
  2. In a small vessel add tur dal,chopped tomato,turmeric powder, along with water and green chilli and pressure cook for 3 whistles.
  3. Once cooked keep aside.
  4. Take tamarind extract in a vessel.
  5. Allow it to boil.Add jaggery.
  6. Add grated coconut.
  7. Add cooked dal and tomato mixture.
  8. Add udipi rasam powder.
  9. Boil till the raw smell goes away.
  10. Temper with the ingredients given in the "To Temper" list and pour in the temperings to the rasam. Add coriander leaves.
  11. Udipi Rasam is ready for serving.

Notes

You can can fry roast grated coconut for more flavour.

Add green chillies while tempering in place red ones.

You can grind tomato and add if not pressure cooking.
