SPAGHETTI WITH WALNUT PESTO SAUCE

Spaghetti is a favourite food of my daughter. She loves any variety I make and does not complain a bit about this. Pesto Sauce is usually made with basil leaves but I have used coriander leaves. Similarly there are a lot of variation in the usage of nuts, some use almonds, some pine nuts and some use peanuts as well. It is necessary to get the crunch along with the fresh bite of greens and that would be enough to make his recipe an instant success with all. The sauce is luxurious with a velvety finish. The crunch of walnuts adds a special touch to the dish and was instantly liked by all at home. You can whizz up your own pesto sauce under 10 minutes and the good part is it tastes so awesome. I have some recipes of spaghetti such as Corn Spaghetti and Spaghetti In Tomato Sauce which are family’s favourites.

Walnuts are known to have ample sources of mono saturated fatty acids and omega-3. Walnuts improve bone health which is so essential to the body. Coming back to the name pesto, it is a generic term which means to pound or crush. Olive oil is widely used in Italian cooking and so here also it’s usage is done. Traditionally garlic, kosher salt, pine nuts or walnuts are ground with cheese and olive oil giving rise to distinct flavours. I have also heard cashew nuts and pecan nuts are also used in place of walnuts. using the same pesto sauce as base many types of pasta can also be made. It is all up to our imagination and culinary innovations. The cheese added lends a creamy toch to the pesto and coupled with olive oil the taste is out of the world.

Instructions
  1. Cook spaghetti in water adding a drop of oil.
  2. Cook till soft and done.
  3. Strain and set aside.
  4. In a blender add coriander leaves, garlic pod s, olive oil and walnuts.
  5. Grind to a smooth paste.
  6. In a pan add oil and add strained spaghetti.
  7. Add ground pesto paste.
  8. Add cheese now.
  9. Spaghetti with walnut pesto sauce is ready.
Recipe Notes

You can use almonds or cashew nuts in place of walnuts.

You can use any parmesian cheese or cheddar cheese as per your preference.
