SHAHI TUKDA

Shahi means Royal and Tukda is piece in Hindi.So literally translated it means a royal piece.Shahi Tukta is similar to Double Ka Meetha and is a super delicious and easy recipe.This mouth watering deep fried bread in ghee topped with rabri s a delight to anyone who lays hands on it.I found a difficult though in taking pistures as it was late evening and the light was dim.Otherwise this was an easy and satisfactory dessert to make.The rabri making is the only job here,rest of the work takes only a few minutes.The rabri should be of the custard type consistency a little thicker,so that it doesn’t make bread soggy.Once you cool the rabri it will thicken a bit.

For additional taste and aroma I have added saffron strands in the rabdi. The pista is finely chopped and and toppled all over.I have seen some people adding grated paneer to the rabli to make it thicker,though I have not added.You can try this sweet for the upcoming Diwali festival or serve it during Navarathri as well.This dessert falls in the category of Mughalai cuisine and Hyderabadi cuisine.But it is widely made all over the country and relished.The original recipe calls for frying the breads in ghee and believe it really tastes awesome.And when guests drop over and you are running out of ideas try this delicacy and they will want more and more.Try out this simple recipe and let me know.

  1. Boil milk by adding saffron strands.Add corn flour mixed in water for thickening of the milk.Boil till reaches thick consistency.
  2. Add chopped pistas.
  3. Switch off the flame once the mixture is thick.
  4. Take the bread slices .
  5. Cut the edges and cut diagonally,thus making triangular pieces.
  6. Heat oil in a pan and fry bread pieces one by one.
  7. Take them out once golden brown.
  8. In a pan add water and sugar and make sugar syrup.Boil for sometime till sugar dissolves.
  9. Dip the fried bread pieces one by one.
  10. Take them out and arrange on a plate.
  11. Place the soaked read on the serving plate and pour the rabdi all over.Garnish with pista. Serve chilled.

Notes

You can add almond powder to the rabdi while boiling milk.

You can add any nuts of your choice.

You can add a few drops of rose water for more taste.
