Soups are always healthy,filling and comforting.I make some soup or the other once in a while and my family enjoys it too.When the weather is cold,this even more awesome.I tried it for the monsoon season and was loved y all.A soup with vibrant colour and simmered to perfection,this will never go wrong to add colour to any dinner menu.Red Bell Pepper has cancer combating lycopene and tastes with a mild sweet flavour. The creamy texture and roasted aroma gives all the more taste to the soup.Red Peppers are a source of Vitamin A,C and folate.It also helps in night vision.They are packed with anti oxidants and burns more calories.

I have used red bell pepper in salads,pizza toppings, manchurian and fried rice.This was very new kind of an italian soup and was a yummy choice to make.Pair it up with bread sticks,rusk or crackers or simple toasted bread.The butter in which the veggies are roaasted leaves a memorable taste to your tongues.When you are lazy and are not in a mood to cook dinner,try and make this soup and you will surely thank me..

  1. Take a red bell pepper and roast it directly on the flame.
  2. Roast it finely.
  3. Once cooled remove skin.
  4. Chop it into pieces.
  5. In a pan add butter,oil and chopped onion.Fry till pink.
  6. Add chopped tomato and fry again.
  7. Let it turn mushy.
  8. Add chopped red bell pepper,fried onion and tomato in a blender.
  9. Blend nicely.
  10. Transfer it to a pan.Add some water,if needed.
  11. Add salt.
  12. Add dried basil.
  13. Mix well and simmer for 5 minutes.
  14. Garnish with basil leaves.Roasted Red Bell Pepper Soup is ready to be served.

Notes

You can add some cooked pasta and add it to the soup.

Adding black pepper powder enhances the flavour.

You can also garnish with coriander leaves.
