Roti/Indian Flat Bread

PUDINA PARATHA

Pudina Paratha is a spicy,crispy mint flavored Indian flat bread.Normally for dinners I make parathas or rotis but have never tried a mint flavored one.I usually make an alu,methi or gobi paratha.This one turned super flaky,crispy and delicious.You can add coriander leaves as well,but since I wanted the predominant taste of mint leaves,I added that only.Mint as we all know is a wonder herb.It aids digestion,acts as mouth freshner and cures allergies and common cold.This is a adapted from an old cookbook of mine which had an easy and quick method of preparing the recipe.

You can make these parathas either in square,triangle shapes or can make it as lachcha paratha as well.The spices are roasted and grounded coarsely an added on top of the rolled parathas over a tawa.This gives a great taste and unique flavour to the paratha.Normally in restaurants or dhabas these parathas are bathed with a good dollop of butter,but if you are too health conscious you can avoid butter.In this recipe the mint leaves are roasted lightly on a pan to bring out the flavours and to remove moisture.The spices added to it also give a nice aromatic touch to the recipe.

  1. Wash and pat dry the mint leaves.
  2. In a wide bowl add wheat flour,salt and oil.
  3. Mix well.
  4. Add three fourths of the mint leaves now.
  5. Sprinkle water as needed.
  6. Knead it to a soft dough.
  7. In a pan dry roast the remaining pudina leaves.
  8. Roast till till the moisture is completely absorbed.
  9. Add red chilli,cumin and coriander seeds.
  10. Roast it till nice aroma comes.
  11. Transfer it to a blender once cooled.Also add the roasted pudina leaves.
  12. Powder nicely.
  13. Out of the dough prepared earlier make lemon sized balls and keep it ready to roll them out.
  14. Flatten it on a working top with a rolling pin.
  15. Make it it to a nice round shape.
  16. On a tawa add little oil and place the paratha.
  17. Apply some more oil or butter on top.
  18. Smear and spread the powder on top of the paratha.
  19. Once cooked on one side flip and cook the other side.
  20. Make the other parathas similarly.
  21. Delicious Pudina Parathas are ready to be served.Have it with your favorite sabzi,dal or any pickle and curd.

Notes

You may add some chaat masala to the ground mixture for extra tanginess.

You can roll this paratha in any shape.

You can smear it with butter for more flavour.

You can also coriander leaves along with pudina leaves.
