PISTA CHIA SEEDS MATKA KULFI

 

 

I was super excited to make this matka kulfi and that too with the ingredient Chia Seeds sent by goorganicindia for the Belly Nirvana programme by Plattershare.Chia seeds are often recommended by nutritionists just because of their super health benefits.They contain dietary fibre,protein,omega-3 fatty acids,calcium,copper and zinc.It aids digestion and promotes heart health.It also helps in diabetics and boosts your energy and metabolism.Keeping this mind goorganicindia produces all products with organic manure and is really upto the mark as well.I like fresh green colour and pistas too.Keeping this in mind I have made this delicious recipe.

Pistas were lying in the kitchen pantry for long now.I soaked them and removed their skin.I also have added pista essence for more colour and taste.You can add condensed milk for richness and creaminess and gives soft and chill fell when placed in the mouth.I have added only pistas but you can add badam also.Traditional kulfis come in matkas or moulds.So I have set this in matkas.Matkas are easy to handle and sets fast too.Moreover they look attractive.Using this as a base,try using,almonds,dates,mangoes and strawberries.Try using bread slices for more thickness to the kulfi.

  1. Soak chia seeds in water for for half an hour.
  2. Boil water and add pistas.
  3. Remove skin and place it in a blender.
  4. Grind to a smooth paste.
  5. Boil milk and add cardamom powder and sugar.
  6. Mix corn flour in water.
  7. Add corn flour slurry to milk.
  8. Add pista paste to milk.
  9. Boil well.
  10. Add pista essence.
  11. Mix well.
  12. Strain chia seeds.
  13. Add chia seeds to the milk mixture.
  14. Switch off the flame and cool down.
  15. Pour in kulfi moulds and matkas.
  16. Cover the matkas with silver foil and close the kulfi moulds.
  17. Freeze till it gets set.
  18. Serve chilled.

Notes

You can add almonds along with pistas.

In place of corn flour,you can add bread slices.

You can add some fruits and make fruit based kulfi too.
