PAV BHAJI

Pav Bhaji is one of the most popular street foods of Mumbai. Pav means bread and bhaji is vegetables.The vegetables are cooked ,mashed and blended  with aromatic spices  and served with shallow fried  buttered buns.This is a party food as well and would be a hit among kids.Kids are fussy eaters and  sometimes it becomes difficult for us to make them eat healthy veggies.This irresistable food can be anyone’s delight when served piping hot with butter on top.I have made this recipe several times as this is my daughter’s favorite, but have never blogged about it. So taking a chance I made it a point to capture pictures this time and was  totally pleased with the outcome. I have used Eastern Masala I got for the review and was happy to do so. Eastern Masala has launched many products and to suit every taste bud. This recipe is a very simple one and is easy to follow with step by step pictures. Adding mixed vegetables adds taste to the bhaji and most importantly green peas and tomato with chopped capsicum is the main highlight here.

I have come across many variations of Pav bhaji, like Mushroom Pav Bhaji, Sprouts Pav Bhaji, Jain Style Pav Bhaji etc. This one I have made is the basic recipe adapted in most of the places though the proportions and vegetables may differ from place to place. In the Juhi Beach street side shops this is sold like hot cakes and so in some places it is called Mumbai Pav Bhaji adding touch to the speciality of the region. I have already posted  Vada Pav, which is another special street food of the region. This can be a great dinner option and is a fulfilling to the eyes and stomach. Instructions
  1. Boil the veggies except onion, tomatoes and capsicum in a pressure cooker.
  2. Chop onion, tomatoes and capsicum.
  3. Vegetables are cooked now.
  4. In a pan add butter and oil. Add cumin and allow it to splutter.Add crushed ginger,garlic and green chilly.
  5. Add chopped onions now.
  6. Add chopped tomatoes and cook till mushy.
  7. Add turmeric powder,red chilli powder and pav bhaji masala powder.
  8. Add chopped capsicum.
  9. Cook well.
  10. Add rest of the cooked vegetables and salt.
  11. Mash well with the back side of the laddle.
  12. Add coriander leaves for garnish.
  13. Add lemon juice for added taste.
  14. Bhaji is ready.
  15. In a tawa add butter and roast pav buns.
  16. Flip and roast the other side.
  17. Serve roasted pav buns with hot bhaji.
Recipe Notes

You can add cauliflower,mushrooms or yellow  and capsicum.

Use butter generously for more taste.

You can avoid ginger and garlic and make a jain version of pav bhaji.
