MUSHROOM FRIED RICE

It has been a very long time since I blogged  and  it is great to be back to my passionate blogging about the food I make. This delicious Indo- Chinese rice with fresh mushrooms is a tasty and healthy option for those quick meals that can be made within no time. My daughter loves mushrooms in any form and this was a long awaited recipe that has been pending for me in the to do list. She was doubly happy as I surprised her with this filling recipe for dinner last week.  And since Chinese food is a favorite at home I paired it with Honey Chilli Cauliflower only to see the bowl’s contents vanishing in no time. With a handful of essential Chinese ingredients  one can easily make this Fried Rice with much ease. I have used basmati rice which is soft and fluffy and is full of aroma and flavour.

I had made a Mushroom Masala as a side dish for chapathi and this is my second recipe with mushrooms. For the authentic chinese feel soya sauce always helps. The various sauces as green chilli sauce and red chilli sauce also add a special touch. Also as a person who was reluctant to cook mushrooms, this came as a nice surprise as it was not only nice but also easy lunch box option as well. This can also be made when you have guests popping over and with a lot of variations in the vegetables usage. Also mushroom is not a vegetable but it comes under the clasification of Fungi which is rich in nutrition. It decreases the risk and obesity and promotes healthy complexion and hair. So why not start using mushrooms in your diet by first trying out this tasty Mushroom Fried Rice.

Instructions
  1. In a pan add oil and once it gets heated add chopped onion.
  2. Add half of the spring onion greens reserving the other half for garnishing.
  3. Slit the button mushrooms and keep them ready.
  4. Add the mushrooms and fry till soft.
  5. Add soya sauce.
  6. Add green chilli sauce.
  7. Add red chilli sauce.
  8. Add capsicum and fry.
  9. Cook basmati rice in usual manner and cool it.Add it to the pan .
  10. Add salt.
  11. Add black pepper powder.
  12. Add rest of the spring onion greens for garnishing.
  13. Mix well and toss.
  14. Serve with any gravy or Tomato Sauce.
Recipe Notes

You can add more veggies like carrots, cabbage or peas.

You can also add butter while sauteing.
