Iam always fond of vadais and this keerai vadai is so crisp and full of flavour i can’t tell you.It was on one of these raint days i made this and weather was just an excuse.For me to make and feed my family is the joyous and likable things to do and i enjoyed making these cute little fritters..Spinach has all the iron and minerals and kids who hate eating these greens would surely love to grab a bit on these.Serve as a starter or an evening snack or tiffin this one will please all.I have made these vadais with urad dal but was wanting to try with channa dal keerai vadai as awell.Will try and post that soon.Now for this simple yet flavourful recipe..

Instructions
  1. Soak urad dal for an hour.
  2. Drain and add green chillies,ginger,salt and asafoetida in a blender.
  3. Grind in to a fine and smooth batter.This is the basic urad dal or methu vada batter.
  4. Add curry leaves and mix.
  5. Take vada batter and add chopped spinach leaves and onions .
  6. With the help of a zip lock or any other cover make vadas.
  7. Drop in slowly in a kadai.
  8. Take out once crisp and brown.
  9. Serve immediately with coconut chutney.Yummy.

  • You could add coriander leaves along with spinach leaves.
  • Keeping the batter in the fridge for an hour before frying will give a nice crunch.
  • Adding two twospoon of rice flour while grinding the batter will give a crunch to the vadas.
