HARIYALI MIXED SPROUTS PULAO

Sprouts are a healthy inclusion in our diet. And I always advocate healthy food in my cooking. This time I tried this with recipe with Silver range of Kohinoor Silver Super Basmati Rice which is aged & matured naturally for 24 months an aged rice and when cooked has the best mix of length, colour and flavour with sweet taste.

Kohinoor Super Basmati rice is a 100% pure & original Pusa basmati variety which gives whitish slender rice with a buttery flavour and subtle aroma, thus making this the perfect rice for the special dish, I decided to create a dish which is healthy and fulfilling. I set to work on my hariyali mix sprouts pulao. Sprouts are packed with nutrients and are full of energy. And the spicy chutney which I have added to the rice plays the hariyali part, i.e. green part. Sprouting, as we all know enhances the nutritive value of the whole food in which it is added. Moreover the crunchy texture of the sprouts adds more nuttiness to the dish. This is also a diabetic friendly recipe and quite filling too. It is sumptuous and highly aromatic owing to the rich basmati rice used. Also it is easy to digest. Here’s a quick look at the recipe.

Instructions
  1. Soak Kohinoor Super Basmati Rice in water for half an hour.
  2. Add the ingredients given in the "FOR THE CHUTNEY "table and place them in a blender.
  3. Grind nicely and take in a cup.Squeeze lemon juice.
  4. In a pan add oil followed by jeera.
  5. Add sliced onion now.
  6. Add mixed sprouts and salt.
  7. Cook well.
  8. Add the green chutney now.
  9. Cook rice and allow it to cool.
  10. Add the cooked rice to the onion and mixed sprouts mixture.
  11. Mix well evenly.Garnish with coriander leaves.
  12. Hariyali Mixed Sprouts Pulao is served.I had it with Onion Raitha.

Notes

You can add ginger garlic paste while sauteeing onions.

Addition of clove or bay leaf enhances the aroma.

You can use any sprouts of your choice.If you want add a pinch of pepper powder for that added taste.
