GUD PAPDI

Gud Papdi or Sukhdi as it is called is an authentic Gujarati sweet made with wheat flour and jaggery.It can be made in a matter of minutes and is full of taste and is also an energy booster.It is also made in Maharashtra and is eaten with same awe.Many people in Gujarat have the habit of eating this at anytime of the day, preferably for instant jaggery or sweet rush.It has a crumbly texture and tends to melt in the mouth once you bite in to it.Though I have never tried any Gujarati sweets,but have a few snacks on my blog,why not it be a beginning?It is Navaratri time and it is time for Dhandia or folk dance of the state.People celebrate it with equal fervour as we keep Golu down south.

It can be made rich also by adding various nuts like pistas,almonds etc.But the original recipe sticks to simplicity and uses just minimal ingredients of wheat flour,jaggery and ghee.People eat it to boost their immunity and also is good for health when eaten during winter time.I felt I could have added more ghee,but it was crunchy and soft at the same time.In fact I couldn’t explain it’s texture,so make it to see and enjoy this festive by making this simple delicacy.

Instructions
  1. Heat ghee in a pan and roast till nice aroma comes.
  2. The ghee will be absorbed and turn brown.
  3. Add powdered jaggery.
  4. Add rest of the ghee and wait till jaggery and wheat flour are mixed.
  5. In a greased plate transfer the contents.
  6. Cut in to squares.
  7. Serve at any time of the day.

Notes

You can add dry ginger powder for additional taste.

You can add chopped nuts on top.

You should mix fast after adding jaggery,or else you will end up with lumps.
