GOBI PARATHA

 

 

Gobi or Cauliflower Paratha is one the popular and tasty paratha variety from the Punjab region.It is stuffed in the wheat flour dough which is rolled and shallow fried.It is mildly spicy owing to the addition of spices and tastes great with any side dish such as vegetable or dal. Some people add chopped onion along with cauliflower,but I have not added onions in this recipe.There are various restaurants and road side dhabas which sell these and are relished by all.The easiest way of using cauliflower would be to grate of very finely chop them.Many a times the stuffing would come out and would be really frustrating to make it again.Later with practice and experience I learned to stuff it correctly and grating the cauliflower was an added advantage of the proper stuffing.

Among the regular varieties I make for breakfast I also make this for packing lunch for my daughter.I also make other varieties such as Methi Paratha,Alu Paratha and Mooli Paratha. Whatever side dish is served with these parathas,the best combo would be with curd and pickle.The stuffings can be altered to suit your taste and you can some finely chopped capsicum or grated carrots too to enhance the flavour.Play with your imagination and try to make different permutations and combinations.Now see the recipe down below.

  1. Grate ginger and chop chillies and coriander leaves.
  2. In a pan add oil cumin seeds,chopped green chillies and grated ginger.
  3. Add grated cauliflower and coriander leaves.
  4. Add red chilli powder,turmeric powder and salt.
  5. Mix well and cook.
  6. Allow it to cook by sprinkling some water and wait for 5-10 minutes.Stuffing is ready.
  7. Let it cool in a plate.
  8. Add wheat flour in a wide bowl.Add salt.
  9. Sprinkle some water and add oil.Knead well
  10. Dough is ready.Set aside for 15 minutes.
  11. Make small balls out of this.Place it on the rolling pin.
  12. Roll it and place it on the flattened dough.
  13. Slowly fold in and cover the stuffing .Take care it doesn't come out.
  14. Flatten it slowly by dusting some wheat flour.
  15. Heat a tawa and grease some oil.Slowly place the paratha on the tawa.
  16. Once cooked flip and cook on the other side.
  17. Gobi paratha is served.I served with Mushroom Masala.You can choose to make any side dish.

Notes

You can grated or crushed garlic pods along with cauliflower while making the stuffing.

You can add carrots or capsicum too while sauteeing cauliflower.

You can add chaat masala or amchur powder while adding rest of the spices for somw tanginess.
