GINGER CARDAMOM TEA

When you think of any comforting bevarage then you can’t miss this Ginger Cardamom Tea. Growing up in a Tamil household in New Delhi though it would be filter Kappi by Amma in the mornings, I also developed a liking to this adrak elayachi chai. Tea is something that gives comfort to many in the mornings as someone rightly and aptly said, it is the morning fuel which sets you going. Though hubby loves coffee, once in a while he likes to have flavoured teas on lazy weekends after a snack of Onion Pakoda or Bajji. After all who doesn’t? Masala Tea is also a favourite at home and daughter dear  loves lemon tea with honey. So I make all these and also like to serve them with tasty accompaniments. The aroma of freshly crushed ginger and the broken pods of cardamom surely soothes your senses and tempts to ask for one more helping.

Unlike Masala Tea which has a whole lot of mixed spices, this one has only two ingredients, ginger and cardamom. You can also use dried ginger powder or sukku as it is called in Tamil, but fresh ones yields best results. There are many variations of making this simple tea. Some boil tea leaves in water and then add milk to it. On the other hand some boil tea leaves and sieve and take out the decoction and then add boiled milk and mix it. Some prefer to add sugar, some jaggery or palm sugar. Whatever the manner you make be sure to satay in eye contact with the boiling tea leaves as they always don’t boil once I am there and once I turn around they spill over and mess up everything. Instructions
  1. Boil water.
  2. Add tea powder.
  3. Add crushed ginger.
  4. Add cardamom powder.
  5. Add milk and boil.
  6. Strain in a cup.
  7. Add sugar and mix.
  8. Serve hot with biscuits.
Recipe Notes

Do not simmer the tea for long as this will result in bitter tea.

You can add the tea leaves once the water starts to boil or together itself as per your preference.

Just two minutes is enough to get perfect colour for the tea.
