FOXTAIL MILLET PONGAL

These days millets are getting a lot of attention among people and is consumed with great interest due to its health benefits.It is second most widely planted species of millet and is rich in carbohydrates and is rich in fibre.It is helpful in combating with heart diseases and is good for diabetic patients. Lord Muruga is said to have had Thenum Thinai Maavum meaning foxtail millet and honey. Thinai is foxtail millet in Tamil and is one of the oldest known food grains.One of the first recipes I made is Foxtail Millet Pongal. I have always thought Pongal is a good breakfast option and is nutritious too.The inclusion of Foxtail Millet is good since it is gluten free.Organic grown foods are also gaining importance these days and as these are grown with organic manures,they are getting very popular.

Knowing the importance and thereby creating an awareness many companies have started producing these millets. Here I have made savory or kara pongal.But you can try the same and make sweet pongal using powdered jaggery. That also tastes great.Making this recipe was a healthy affair and I have decided to include more millets in my diet and thereby adding more millet recipes in my blog.Talking of pongal,it tastes good when ghee is added in ample quantity.Do try out this excellent millet pongal and reap its benefits.

Instructions
  1. In a pan dry roast foxtail millet.
  2. Add moong dal and roast till nice aroma comes.
  3. Transfer both these in a vessel and add water.
  4. Add salt and asafoetida and pressure cook for 3 whistles.
  5. Open and mash the mixture.
  6. In a pan add oil,ghee,pepper,cumin,cashew nuts and curry leaves.
  7. Roast till cashews turn golden brown.
  8. Add to this pan the cooked foxtail and moong dal mixture.
  9. Mix well till it gets amalgamated.
  10. Foxtail Millet is ready to be served.Serve with chutney or sambhar.I served with Drumstick Sambhar.

Notes

You can make a sweet version of this pongal.

Adding grated ginger enhances the taste.

Don't compromise on adding the said quantity of ghee.
