FILTER COFFEE

The aroma of freshly brewed coffee always brings comfort to my mind and spirit. I can’t do anything in the morning without having a regular dose of coffee. Coffee is such an integral part of our lives that you cannot do anything before enjoying it in the mornings. This is a drink made by boiling milk with added sugar and frothing it before adding the decoction extracted from the filter. The coffee though made in filters has different names such as Madras kappi, Kumbakonam Degree kappi, Mysore coffee and so on. Coffee beans used commonly are arabica and robsta. Also the percentage of chicory added varies in the  varieties.The beans are medium roasted and ground to perfection. The coffee powder I have used here is from Kai Ruchi brand’s special 15% coffee powder. I can’t say how aromatic and pleasing it was to the taste buds. Freshly ground coffee powder from the finest blend of Arabica and Robusta coffee beans with 30 % added chicory for strong coffee lovers.

The heavenly coffee instantly cures a headache and raises your spirits. The brand also has an instant coffee variety which is said to be equally tasty. It comes in 250 gms packets and is tightly sealed to maintain freshness, taste and aroma. Kai Ruchi also have other products such as instant mixes, masala powders, pickles and health mixes. They deliver free of cost for purchases more than Rs 299 and are prompt in delivering.  The coffee is served on a tumbler and dabara. Though it can be in steel also I have used a brass one for that authentic touch.The South Indian filter coffee is made with a filter that is made out of cylindrical cups with the top part pierced with holes where the coffee powder is added. The hot water is poured on it and the decoction gets collected at the bottom. Enjoy this coffee following this method and I am sure you won’t settle with just one cup.

Instructions
  1. Take out the coffee filter. The umbrella is for pressing the coffee powder on the upper part of the filter.
  2. Boil water.
  3. Add water to the filter.
  4. Press with the umbrella on top part of the filter.
  5. Let the decoction collect at the bottom of the filter. Finish adding all the water.Decoction will be collected now.
  6. Boil milk.
  7. Transfer the milk on a tumbler.
  8. Add sugar.
  9. Froth it up and then add the collected decoction.
  10. Fresh coffee looks like this.
  11. Transfer it to a brass tumbler.
  12. Enjoy refreshing coffee hot.
Recipe Notes
  • Always use fresh and full cream milk.

Do not reheat coffee for any reason.

Do not add more water as it will result in a runny decoction.

Do not reheat the milk often, use fresh milk each time.

Decoction can be stored in fridge by addding a little sugar for 2-3 days.
