Many of you might think what is the necessity to post seperately “CURD RICE.”I choose this since I felt curd rice which is so so south indian recipe should not be let behind in my blog and also made a huge lot of temperings to add to the taste andmake it all the more yummy and creamilicious.Curd Rice can be a good lunch box option as well and can with various temperings can be made more delicious.Curd Rice is usually taken as a last course in a south indian meal just before dessert.Since we are are adding milk and curd here it won’t be sour and creamy texture will be liked by one and all.Many North Indian friends and readers from other part of the globe might not be aware of the endless toppings that can be made and relished with curd rice.See down below the humble recipe of Curd Rice put with a classy touch.

Instructions
  1. Keep ready grated carrots,chopped ginger,mango bits,curry leaves and green chlies. Cook rice in the ratio 1:4 since we want a creamy and soft textured curd rice
  2. Cook rice in the ratio 1:4 since we need a creamy and soft textured curd rice.Once done mash well.
  3. Once rice has cooled completeley add salt and milk. Mash well
  4. Add curd/yogurt and with the help of the laddle mash well
  5. Mix well to get a creamy texture.
  6. Add cashewnuts and raisins.
  7. Temper with all the ingredients given in the "to temper" table.
  8. Pour in the temperings.
  9. Add chopped mango pieces and grated carrots.
  10. Mix well.
  11. Creamy curd rice is ready.

Serve with any pickle .I have served with Nellikai Thokku/Gooseberry Thokku.

Notes.

You can add chopped fruits as cherries or black and green grapes.

You can also add pomegranate seeds.

Adding fried curd chillies imparts extra taste.

If you can adjust the consistency of curd rice by adding curd.

you can fry the cashews and raisins and add to the rice also.
