CORIANDER RICE

 

 

Many of the mothers would be wondering what to pack for lunch as in India most of the schools are now reopened after joyful vacations.I also face such problems while deciding about the lunch menu and try to bring in variety to break the monotonous ritual of packing same kind of food.The rice should be flavourful tasty and yet easy to make.I choose this coriander rice mainly because of colour and nutty flavour. I have quite a few recipes with rice on my blog and this is just an addition to the list.Though I make it regularly,didn’t have a chance to click and is doing so only now.

Normally coriander and curry leaves are disliked by children and thrown away many a times.The kids don’t know the importance of goodness of these greens and as we know something about these should try to include in their diet these greens on a large scale.I had a chance to eat this when I chanced to eat at a function in my mother’s place and a cook who prepared this gave me the recipe too.I have tried to make it in the similar way I tasted it and this turned out super tasty and even after hours of making this stayed aromatic and tasty.You can add stems of corianer leaves which are so healthy and nutricious.The leaves should be cleaned in running water and rinsed several times before making use of them so as to avoid any mud particles present in the roots.See down below the delicious Coriander Rice recipe.

Instructions
  1. In a pan add oil and urad dal. Add slit green chilles.
  2. Once it turns brown add asafoetida and coriander leaves.
  3. Transfer the contents to a blender once cooled.
  4. Grind nicely.
  5. Temper with the items given in the "TO TEMPER" table.
  6. Add coriander mix.
  7. Mix evenly.
  8. Add cooked rice.
  9. Mix well to get coriander rice.
  10. Coriander Rice is served.I made Dangrma Pachadi and fried vadams to go with it.

Notes

You could add red chilles in place of green ones.

You can also add channa dal for tempering for that nutty taste.

Always use fresh coriander leaves.
