COCONUT LEMON PEAR POPSICLES

It is getting unusually hot here in Bangalore and I wonder what real summer is going to be. It is difficult to eat food sometimes and we long for juices,smoothies or ice creams to beat the heat. A better way is to include fruits that are available and give a healthy twist to the dishes we make. I tried out coconut lemon pear popsicle and it was loved by all at home. The water I used was coconut water which has natural sweetness and the lemon added it’s own tingling taste. Chopped pears add a nice texture and offer taste in every bite. So basically this is a frozen lemonade with coconut water and pears. Did you know that coconut water is a real coolant and is suitable for this scorching heat. Lemon on the other hand are loaded with C vitamins and pear is packed with dietary fibre, anti-oxidants, minerals and vitamins.

As summer is approaching  I am afraid many of you would be wondering as what to make for kids during holidays. This would be a nice recipe to add to that list and many popsicles can be made using seasonal fruits and given to please the kids. I always make it a point not to indulge in fizzy drinks, artificially flavoured bevarages and try out healthy drinks or fresh juices at home. The coconut water mixed with the fruits yields in lowering the blood pressure and is also less in calorie content. The lemon factor are real thirst quenching and has a pleasant taste too. These kinds of popsicles help you keep hydrated . As we all know in summers we lose water content in our bodies and try to include foods which provide water content. Instructions
  1. In a bowl add coconut water.
  2. Add sugar.
  3. Add lemon juice.
  4. Mix well.
  5. Chop pear and keep aside.
  6. Add it to the coconut water lemon mixture.
  7. Mix well.
  8. Pour it in popsicle moulds.
  9. Keep it in the freezer for 6 hours.
  10. Remove after 6 hours and place it in cold water so that the popsiscle comes clean.
  11. Serve chillled.
Recipe Notes

Add honey in place of sugar.

Add chopped pineapples and apples for more crunchy taste.

Add mint leaves for that refreshing taste.
