COCONUT BURFI/THENGAI BURFI

 

I can’t think of coconut burfi without Ravi.Though he dosen’t have a sweet tooth he likes it to the core.So i indulge into preparing these whenever i can.So it was a long time pending post  for me as this was in my draft for quite long now.I at first was very reluctant into making these and was wanting to find a way to master in this.I always ended up making slightly brown coloured burfis everytime and struggled to find a way out.Atlast now i know the  secret of making snow white coconut burfis.Want to know how?See recipe below and enjoy making and sharing this exotic sweet.

  1. Break the coconut and keep it in the freezer.After it has become hard put it in water so that the coconut meat comes out of the shell easily.Now remove the black part of the coconut using a peeler.Now you get white coconut all over.Cut into small pieces and grate it in a blender.Also add cashews to the coconut.This is the trick to get snow white coconut burfis i mentioned about in the beginning. Put the grated coconut and cashew mixture in a pan.
  2. Add sugar.
  3. Add milk and cardamom powder stirring in between.
  4. The mixture will thicken.You will see the whole mass will accumulate in one.Add ghee now.Mix well and switch off the flame.
  5. Transfer into a ghee greased tray and allow it to cool.
  6. Cut in to squares.
  7. Enjoy this delectable sweet with your loved ones perfect for any celebration.

Notes

Add rose essence while switching off.This will give a unique taste.

Some people add roasted gram powder or rava,But i wanted pure white colour,so didn't add.

Cashews can be used for decoration.
