CLUSTER BEANS PARUPPU USILI

 

Paruppu usili is a traditional tamil brahmin curry variety had with rice and gravy.Lentils are soaked, ground and steamed then crumbled and mixed with boiled veggie in this casa clucter bean or kotthavarangai in tamil.Usually this is a great combo with Mor kuzhambu but tastes as much good with vatha kuzhambu as well.You can try the same recipe with french beans as well.Follow this proceedure and enjoy a traditional meal with your loved ones.

Instructions
  1. Soak toor and channa dal in water for about an hour along with red chilles.
  2. After the said time,drain and place the contents in the blender.Add salt.
  3. Grind coarsely.
  4. In an idli pan smear some oil and place the ground mixture.
  5. Once steamed keep it aside.
  6. Chop cluster beans,carefully removing the two pointed ends.I added a pinch of turmeric powder and salt while cooking.
  7. Cook till soft.
  8. Strain and keep aside.
  9. Take the steamed usili from the mould once cooled and put in a blender and just give one quick round in the mixer.This is for the even texture.You could alternatively crumble with your hands but this works good for me.
  10. Grind.
  11. In a pan heat oil,mustard an durad dal to temper.
  12. Add the lentil crumbles and cooked cluster beans.
  13. Mix well so that both are evenly mixed.Switch off the flame when done.
  14. Serve with rice and morkuzhambu.

Notes

  • Ensure that the lentils are coarsely ground .
  • You can use veggies like cabbage,cauliflower,banana flower etc. in place of cluster beans.
  • You can even mix this with rice and eat.
