CHINESE VEG FRIED RICE

Chinese style veg fried rice is a favorite at my home. I pack this for lunch to my husband and my daughter and they love it so much that it doesn’t even matter if the food is cold. My daughter would order this or veg hakka noodles every time we visit hotels. It is a rage among kids of this generation of having chinese food at restaurants and I have made a small gesture of making it healthy as well by adding lot of fresh veggies.But then hotels might add Ajinomoto or Chinese salt which I do not use, as it might be harmful to health. I have included Indo Chinese vegetables here and to suit our family’s tastes.As in most Chinese dishes cabbage and spring onions are included I have also added them.You can add red and yellow peppers too to add colour to the dish.

I have added minimal spices so the rice is plain white, but has the goodness of vegetables. I had some Kohinoor Authentic Platinum brand Basmati Rice, with which I made a quick one pot meal of this fried rice and it was enjoyed by all. This traditional & authentic variety of Basmati Rice is naturally aged for 24 months and matured to perfection for its pearl look, soft feel and sweet aroma.As the rice was slender and grainy, the rice turned super fluffy, each grain being separate and full of aroma.

  1. Cook rice with 1 1/2 cups of water.
  2. Heat oil in a pan and add oil followed by ginger and garlic.Now add onion.
  3. Add rest of the veggies given in the list.
  4. Cook till soft.
  5. Add soya sauce.
  6. Add black pepper powder now.
  7. Add green chilli sauce.
  8. Add rice and salt.
  9. Mix well and garnish it with freshly chopped spring onions.
  10. Chinese Veg Fried Rice is ready.

Notes

Serve with any Manchurian gravy.

You can also add red and yellow bell peppers.

Add Chilli sauce or sweet chilli sauce for more authentic flavour.
