BROWN RICE KHEER

I have never tried kheer with brown rice though I make rice based payasam or kheer during festivities or when guests drop over.Brown Rice Kheer was a recipe I stumpled upon when I searching for recipes using brown rice.Brown rice is actually whole grain rice with the outer hull removed.It is not polished and has a nutty flavour and is chewier than white rice hence considered very healthy.It has a good source of magnesium, phosphorous, selenium and Vitamin B6.Also, jaggery has a good source of iron and is much better option than sugar.I made this recipe long back during winter.I realised there are many long pending posts and so posting one by one nowadays.

The consistency of this payasam in a bit grainy and when you cook it you get a smooth texture.The jaggery adds a special flavour to the kheer and the milk richness.The nuts add a royal touch and in short this is a dessert for GODS.You can make this for offerings to GOD and on any special occasion.It becomes special during Diwali or Navarathri celebrations and you can give it a try then and also for any lunch menu on ordinary days.Some people add nutmeg, saffron and other spices, but I have kept it simple and yet this was truly delicious.Try it out this weekend just for a change and let me know.

Instructions
  1. Put brown rice in a blender and grind coaresly.
  2. Pressure cook by adding water for 3 whistles.
  3. Mash well once done.
  4. Transfer the cooked rice mixture to a pan.Add cardamom powder.
  5. Add milk and mix well.
  6. Make a syrup with jaggery and water.Once it thickens,filter it and add to the rice mixture.
  7. Mix well.Let it thicken a bit.Fry cashewnuts in ghee and add it to the kheer.
  8. Delicious Brown Rice Kheer is ready to enjoy.

Notes

You can add badam,pista or any nuts of your choice.

Add condensed milk for more richness.

You can as well grind the nuts and add it to the kheer.

Use full cream milk for more taste.
