APPLE ZUCCHINI SALAD

 

Salads are considered healthy and nutritious and more welcomed in the summers. It is that time of the year when we always want something chilled and refreshing and what more better way to combine a vegetable and a fruit drizzled with a salad dressing for this yummy recipe. I love salads and so does my family. In fact I can live on this bowl full of happiness and can have it any time of the day. Apples as we all know is rich in flavanoids, anti-oxidants and dietary fibre. The phyto nutrients helps in reducing cancer as well. Zucchini on the other hand is an excellent source of Vitamin C and Manganese. The cool crunch of this salad will be a pleasing taste to anyone. In fact you can keep this in fridge and can have it for 2-3 days. You can add a variety of fruits for added taste.

The marinate or dressing used here is simple but it always has an added flavour if fresh basil leaves are added. The zucchini and basil taste well together leaving a refreshing taste in your mouth. This fresh and easy to make salad can be packed for office or school and  I am sure it will be a hit anywhere. My friend adds a quater cup of fresh yogurt, plain or flavoured to the salad and it tastes divine too. Many times when you are craving to feed on something try out salads like these which are healthy and benefits you immensely. As you can see I have chopped the zucchinis. You can peel it into thin strips as well. So when you are counting calories and watching health, you now know what to eat. Try out these salads and create a variety of dressings to break  monotony.

Instructions
  1. In a bowl add salad dressing mix.
  2. Add red chilli powder.
  3. Add black pepper powder.
  4. Add honey.
  5. Add lemon juice now.
  6. Add salt now.
  7. Mix well. Salad dressing ready.
  8. In a bowl add cubed apples and zucchini.
  9. Drizzle the dressing over.
  10. Add chopped almonds.
  11. Add mint leaves.
  12. Serve chilled.
Recipe Notes

Add dried basil in place of fresh ones.

You can add carrots, cucumbers too.

You can add hung curd and serve chilled.
